Ingredients
1 1/4 lb small cut potatoes
1 lb carrots cut into 2-inch pieces
3 tablespoon olive oil
1 tablespoon minced fresh thyme
1 tablespoon minced fresh rosemary
Salt and pepper
12 oz. zucchini cut into 1-inch pieces
4 cloves garlic minced
Directions
Preheat oven to 400°F
In a large bowl, place potatoes, carrots, 2 1/2 tablespoons olive oil, thyme, rosemary, and season with salt and pepper to taste
Spread onto baking sheet and put in the oven for 20 minutes
Toss zucchini in a bowl with 1/2 tablespoon olive oil and season lightly with salt
Add zucchini and garlic to the baking sheet with potatoes and carrots and mix everything
Return to oven for 20 minutes longer, until veggies are tender and lightly brown
